BUTTER PECAN BANANA CAKE | |
1/2 c. mashed bananas 1 pkg. yellow cake mix 4 eggs 1 c. water 1 pkg. butter pecan instant pudding mix 1/4 c. oil 1/2 c. finely chopped pecans Combine all ingredients in large mixer bowl. Blend, then beat at medium speed of electric mixer 4 minutes. Pour into greased and floured 10" tube pan. Bake at 350 degrees for 50 minutes (or until toothpick inserted in center comes out clean and bake begins to pull away from side of pan). DO NOT UNDER BEAT. Cool in pan 25 minutes; remove from pan and finish cooling. Top with Confectioners' Sugar Glaze: Gradually add 1 tablespoon hot milk or water to 1 cup sifted confectioners' sugar. Top with banana slices and pecan halves. |
