CHICKEN CUTLETS 
6 boneless chicken breasts
Italian bread crumbs
3 eggs, beaten

Chicken - slice the long way and pound until thin. Dip into bread crumbs, the egg mixture and then into bread crumbs again. Let rest on paper towel until all pieces are coated. Fry a few pieces at a time in hot olive oil. Serve with pasta and salad.
