PIG PICKIN' CAKE 
1 Duncan Hines yellow butter cake mix
4 lg. eggs
1/2 c. Crisco oil
1 (11 oz.) can mandarin oranges

Combine the cake ingredients and beat very thoroughly. Pour into 3 greased and floured or papered cake pans. Bake at 325 degrees for 20 minutes. Test for doneness. Cool completely. When the cake is fully cool, prepare frosting.

FROSTING:

1 (8 oz.) carton Cool Whip, thawed
1 (3 oz.) pkg. Jello instant vanilla pudding
1 lg. (20 oz.) can crushed pineapple, undrained
1 sm. can mandarin oranges, drained
1/2 c. chopped pecans
1/2 c. shredded coconut, if desired

Whip together defrosted Cool Whip, instant Jello, pineapple, mandarin oranges, chopped pecans and coconut, if desired. Spread on cooled cake. Refrigerate the cake until serving and store leftovers in the refrigerator.
