PIG PICKIN CAKE 
1 box yellow cake mix
3/4 c. oil
4 eggs
1 (11 oz.) can mandarin oranges, undrained
1 sm. box sugar free vanilla instant pudding
1 lg. (12 oz.) carton Cool Whip
2 (1 lb. 4 oz.) cans crushed pineapple

Mix together cake mix, oil, eggs and oranges. Pour into 3 greased and floured 9 inch cake pans. (Use 2 pans if desired.) Bake at 350 degrees for 25 minutes.

ICING (ALSO FILLING) :

Drain pineapple, reserving juice of 1 can to pour over baked, warm layers. Mix Cool Whip, pudding and pineapple together. Put between layers and on sides and top. Keep stored in refrigerator.
