SPANISH CORN BREAD 
1 c. corn meal
1/2 tsp. baking soda
3/4 tsp.. salt
1/4 c. Wesson oil
1/2 lb. cheddar or Long Horn or Velveeta cheese, grated
2 eggs
1 c. milk
1 #2 can cream corn
1 med. chopped onion
2 or 3 jalapeno peppers, chopped

Sift meal, salt, soda. Add milk, eggs and oil mix. Add chopped onions and corn mix well. Pour 1/2 batter into hot greased skillet. Cover with grated cheese and chopped peppers. Spoon rest of batter over top. Cook at 350 degrees for 40 to 50 minutes. Corn bread will be more moist than others. Serves 4 to 6.

1 lb. cooked and drained ground beef may be added omitting 1/4 cup Wesson oil. Best with Velveeta cheese!
