SPANISH CORN CASSEROLE 
2 eggs
3/4 c. milk
1/2 c. oil
1 (#2 size) can cream style corn
1/2 tsp. baking soda
1 c. cornmeal
1 tsp. salt
1 (4 oz.) can green chilies, chopped
2 tbsp. sugar
1 med. onion, grated
1 sm. jar pimento, chopped
3/4 c. grated cheddar cheese
3/4 c. grated cheese

Mix all ingredients except second cheese. Pour into greased casserole dish. Top with second 3/4 cup cheese. Bake at 325 degrees for 45 minutes. (Do not overcook.) Serves 8 to 10 people. Double recipe fills 9 x 13 inch pan.
