SPANISH CORN BREAD 
1 c. corn meal
1/2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1 sm. onion (chopped)
2 tbsp. shortening
2 eggs
1 tsp. salt
1 jalapeno pepper (chopped)
1 c. buttermilk
6 oz. can cream corn
1 lb. ground chuck
1 pkg. taco seasoning
1 c. grated cheese

Brown meat in skillet. Add taco seasoning. Mix dry ingredients together. Add eggs, buttermilk, corn, onion, and pepper. Heat shortening in skillet until smoking. Add half of corn bread mixture and top with half of meat and cheese. Add remainder of corn bread mixture and top with remaining meat and cheese. Bake at 375 degrees for one hour.
