RICH FUDGE CAKE | |
1 c. soft butter 1 1/2 c. sugar 4 lg. eggs 1/2 tsp. baking soda 2 1/2 c. all purpose flour 1 c. semi-sweet chocolate morsels 2 (4 oz.) bars sweet baking chocolate, melted & cooled 1/2 c. chocolate syrup 2 tsp. vanilla ICING: 4 oz. white chocolate 1/2 c. semi sweet chocolate morsels 2 tbsp. + 2 tsp. shortening Cream butter in large mixing bowl. Gradually add sugar, beating well at medium speed of electric mixer. Add eggs, one at a time, beating after each addition. Dissolve soda in buttermilk, stirring well. Add to creamed mixture alternately with flour, beginning and ending with flour. Stir in by hand: mini morsels, melted chocolate, chocolate syrup and vanilla, stirring just until blended (DO NOT OVER HEAT). Spoon batter into heavily greased (use shortening) and floured bundt pan. Bake at 300 degrees for 1 hour and 25 to 35 minutes or until cake springs back when touched. Invert cake immediately onto serving plate and let cool completely. Melt chopped white chocolate with 2 tablespoons shortening in microwave oven stirring until smooth. Drizzle over cooled cake. Melt 1/2 cup mini morsels and 2 teaspoons shortening in microwave oven, stirring until smooth. Cool slightly. Drizzle over white chocolate. |
