RICH POUND CAKE | |
9 egg white (1 1/4 c.), room temperature 3 c. sifted flour 1 tsp. baking powder 1/2 tsp. salt 2 c. sugar 9 egg yolks 2 c. butter, softened 2 tsp. vanilla Powdered sugar Preheat oven to 350 degrees. Grease and flour 10 inch tube pan. Sift flour, baking powder, salt and set aside. Beat egg whites at high speed until foamy. Gradually beat in 1 cup sugar, 1/4 cup at a time. Continue beating until soft peaks form. Turn into a medium bowl. Beat yolks at high speed with rest of sugar (1 cup), butter and vanilla for 5 minutes. Mix in flour at low speed until smooth. At low speed gradually beat in egg whites just until blended. Turn into the tube pan. Bake at 350 degrees for 65 minutes or until tester comes out clean. Cool for 15 minutes. Place on plate and sift with powdered sugar. Slice thin. Serves 30. |
