SWEET POTATO SOUFFLE 
3 c. sweet potatoes, mashed
2 eggs
1 c. sugar
1/2 c. milk
1/2 tsp. salt
1 tsp. vanilla

In a casserole, place mashed sweet potatoes and add the eggs, sugar, milk, salt, and vanilla.

TOPPING:

1 c. chopped nuts
1 c. brown sugar
1/3 c. flour
1 stick butter, softened

Mix together the nuts, sugar, flour, and butter. Sprinkle over potatoes. Bake at 350 degrees for 30 minutes.
