CARROT MARMALADE 
2 cups citrus fruit (I use 3 oranges and a lemon)
2 cups cooked mashed carrots
6 1/2 cups sugar
1 pouch Certo

Grate rind off fruit. Peel fruit. In a saucepan mix fruit, carrots and sugar. Boil slowly until quite thick. Watch so it doesn't burn. Boil hard for 5 minutes. Add the Certo and mix thoroughly. Fill jelly jars and refrigerate.

Makes 6-7 jelly jars.
