SWEET POTATO SOUFFLE 
2 1/2 cans yams
3 eggs
1/2 c. sugar
1/2 stick butter
2-3 tsp. vanilla

TOPPING:

1 c. brown sugar
1 c. pecans
1/2 stick butter

Whip yams, eggs, sugar, butter and vanilla together. Pour into baking dish. Bake at 350 degrees until thickened, about 30 or more minutes.

TOPPING: Mix together the topping ingredients, and sprinkle on top and brown, 10-15 minutes.
