SAUSAGES WITH RICE AND
VEGETABLES
 
1 lb. precooked Italian style sausages
6 tbsp. butter
1 med. onion, sliced
1 1/2 c. quick brown rice
1 green or red bell pepper, seeded and sliced
1 pkg. (10 oz.) frozen italian style green beans, thawed
1 can (10 3/4 oz.) beef broth
1 c. water
1/4 c. grated Parmesan cheese

Brown the sausages in the butter using a heavy shallow pan with a tight fitting lid. Remove sausages, from pan and keep warm. Add onion, rice and pepper. Saute for 2 to 3 minutes over high heat, stirring, until onion is tender but not browned. Add green beans, beef broth and water. Top with sausages. Cover and heat to simmering. Cook 15 to 20 minutes or until liquid is almost all absorbed. Transfer to serving platter. Sprinkle with the Parmesan cheese and serve immediately. Serves 4.
