TURKEY FRIED RICE 
2 cups rice, cooked and chilled
1 lb. turkey sausage
1 (1 lb.) box mixed vegetables, frozen
4 eggs, beaten
soy sauce, to taste

Cook rice as directed on package; chill. Fry sausage in large frying pan; drain excess fat. Cook vegetables in microwave about 3 or 4 minutes until tender. Add rice and vegetables to sausage; heat through. Make a well in the center of mixture and add eggs. Cook until eggs begin to set and blend into rice. Season with soy sauce.

Serves 6.
