TURKEY FRIED RICE 
1 tbsp. soy sauce
1 c. diced cooked turkey
1/4 c. vegetable oil
1 c. uncooked reg. rice
2 c. chicken bouillon
1/4 c. sliced celery
1/4 c. finely chopped green pepper
2 tbsp. chopped onion
1 egg, slightly beaten
1/2 c. shredded lettuce

Pour soy sauce over turkey in a small bowl; set aside. Pour oil into a large skillet; add rice and fry over medium heat, stirring constantly, until rice is browned. Add chicken bouillon and turkey mixture; cover and simmer 15 minutes or until liquid is absorbed.

Stir in celery, green pepper and onion; cook, uncovered, 5 minutes. Push rice to side of skillet and add egg, stirring constantly, until set; combine with rice mixture. Stir in lettuce. Serve immediately. Yield: 6 servings.
