TURKEY FRIED RICE 
Fry 1 cup of uncooked rice in 1/4 cup oil until brown. Add 1 cup cooked, chopped turkey and 1 tablespoon soy sauce. Add 2 cups chicken broth. Cover pan and let cook until liquid cooks out. Add 1/4 cup chopped onion, 1/4 cup chopped celery and 1/4 cup chopped green pepper. Stir fry until crisp. Push rice and turkey mixture to sides of skillet, add one egg to center and cook until set. Then stir mixture. Add 1/4 cup chopped Chinese cabbage or head lettuce. Stir and cook for a few minutes.
