TURKEY APRICOT STIR FRY | |
6 oz. pea pods, cooked 1 tbsp. oil 1 c. long grain rice 1 tbsp. cornstarch 2 tbsp. rice or white vinegar 3 tbsp. soy sauce 1/2 c. apricot or peach nectar 1 sm. onion, chopped 1 sm. red sweet pepper, cut in 1 inch strips 3/4 lb. turkey breast, cut into strips 1/2 c. dried apricots, cut into strips Simmer separate until tender, use juice as the nectar, start with 1 cup water, 1/2 cup sugar. Prepare rice according to directions on the box. Keep hot. In wok or skillet, stir fry onions and peppers in oil until crisp tender. Remove from pan, add turkey, stir fry until thoroughly cooked, remove from pan. Add soy sauce, vinegar, apricots, juice, cornstarch and bring to a boil. Add all other ingredients. Simmer until all flavors are well blended. If needed, add more sugar or honey. Optional: 1/2 cup apricot brandy or peach Schnapps. |
