PORK 'N BEAN RICE BAKE 
1 lb. lean pork, cubed
1 oz. seasoned flour
1 lg. onion, chopped
4 oz. bacon, chopped
2 oz. butter
1 (4 oz.) can baked beans
Salt and pepper
1 c. rice
1 1/2 pts. stock

Coat pork with seasoned flour and fry with onion and bacon in butter until browned. Stir in any remaining flour together with baked beans and salt and pepper to taste. Place pork mixture around the edge of a casserole and place the rice in the center. Pour the stock gradually into the casserole so as not to disturb the rice. Bake covered on the top shelf of the oven for 35 minutes at 400 degrees. Makes 4 servings.
