RED BEANS AND RICE 
1 lb. red kidney beans
1/2 lb. salt pork
3 c. chopped onions
1/2 c. green onions
1/2 c. parsley
1 tbsp. garlic salt
1/2 tbsp. oregano
2 tbsp. cayenne pepper
1 tbsp. Worcestershire sauce
1 lb. smoked sausage
1 slice ham
1 bay leaf
2 tbsp. Tabasco sauce
Rice

Slice sausage, ham and salt pork. Brown and drain. Wash kidney beans and soak. Cook beans for 45 minutes at medium heat making sure beans are covered with water while cooking. After beans are cooked, take 1/2 cup beans and set aside, then add meat, onions, parsley, garlic salt, oregano, red pepper, bay leaf, Tabasco sauce to remaining beans. Simmer 45 minutes to 1 hour.

Mash 1/2 cup beans that were set aside and add to thicken. Prepare rice. Cover bottom of large casserole dish with rice and pour mixture over rice.
