FRIED EGGPLANT | |
1 eggplant 1 egg, beaten Flour or meal Peel eggplant; cut into thin slices. Soak eggplant for 10 minutes in salted water. Dip eggplant in egg; roll in flour. Fry in hot fat in skillet until brown. Drain on absorbent paper. Serve. |
