JOSIE'S FRENCH FRIED EGGPLANT | |
1 med. eggplant 3/4 c. flour 2 eggs, slightly beaten 2 c. cooking oil 1/8 tsp. salt 1/8 tsp. black pepper Peel eggplant and cut into 1 1/2 x 4 inches. Do not remove seeds. Dredge in flour, then in beaten eggs and again in flour. Fry in deep fat at 375 degrees for 3 to 5 minutes or until golden brown. Drain on absorbent paper. Season with salt and pepper immediately. |
