PINEAPPLE FILLING 
3/4 c. crushed pineapple
1/2 c. sugar
1 egg yolk, beaten
3 tbsp. butter
1 tbsp. lemon juice
2 tbsp. flour

Combine sugar and flour, mix well. In saucepan pour pineapple, sugar mixture, and lemon juice. Cook over low heat until thick. Mix small amount of hot pineapple with egg yolk. Pour yolk into hot pineapple, cook for 1 minute. Remove from heat stir in butter. Cool, spread between layer of cake. (Ideal for pineapple, coconut cake)
