COCONUT CAKE 
1 box yellow cake mix
2 -6 oz. pkg frozen coconut
1 -8 oz. carton sour cream
1 1/2 cups sugar
1 tsp. vanilla or almond flavoring
1 medium size carton cool whip

Prepare cake. Mix as directed for 2 (9 inch) layers. Cool and slice into 4 layers.

Filling: Mix sugar, sour cream and flavoring together. Add 1 1/2 cups of packaged coconut to sugar mixture, place filling between layer.

Mix remaining coconut, cool whip and ice top and sides of cake. Let stand several hours or overnight before serving. Keep refrigerated.

(Note) - I like to mix all filling ingredients together and frost.
