PUMPKIN SOUP 
1 sm. onion, sliced (1/2 c.)
2 1/2 to 3 c. chicken broth
1 (1 lb.) can pumpkin (2 c.) or cooked fresh
Salt & pepper to taste
1 c. Half & Half
1 tbsp. butter

In pot, bring to boil 1 1/2 cups chicken broth and onion. Cover and simmer 10 minutes. Add 1 cup pumpkin and puree mixture in processor. Add salt and pepper, rest of broth and 1 cup pumpkin. Simmer covered 5 minutes. Stir in cream and butter. Reheat slowly. Freezes well.
