PUMPKIN CHEESE BREAD 
1 c. butter, softened
3 c. sugar
8 oz. cream cheese, softened
4 eggs, beaten
2 c. (1 lb. can) pumpkin
3 1/2 c. sifted flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 c. chopped nuts (optional)

Cream butter and sugar. Add eggs and cream cheese, beat well. Add pumpkin, flour and spices. Mix well after each addition. Stir in nuts.

Grease and flour 3 loaf pans. Preheat oven to 350 degrees; bake for 55-60 minutes. Cool in pan for 10 minutes. Remove from pans to wire rack. This bread cracks on top but doesn't have the traditional dome top. Freezes well.
