PUMPKIN BREAD/ORANGE CHEESE
SPREAD
 
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
3 c. sugar
1 c. vegetable oil
4 eggs
2/3 c. water
2 c. pumpkin

Preheat oven to 350 degrees. Sift dry ingredients together. Mix pumpkin, water, oil and eggs together. Pour into dry mixture and mix well. Pour into 2 greased 9"x5"x3" loaf pans. Bake for approximately 1 hour (depending on size of pan used) or until toothpick inserted in middle of loaf comes out clean. Cool before removing from pan.

ORANGE CHEESE SPREAD: Beat together 1 (8 oz.) package cream cheese at room temperature, 1/4 cup orange juice concentrate at room temperature and 1/4 cup confectioners' sugar until well blended and fluffy. Store refrigerated.
