PUMPKIN BREAD WITH ORANGE SAUCE 
1 1/2 c. flour
Dash salt
1 c. sugar
1 tsp. baking soda
1 c. pumpkin puree (canned pumpkin is fine)
1/2 c. vegetable oil
2 eggs, beaten
1/4 tsp. nutmeg, cinnamon & allspice
1/2 c. chopped nuts

Sift together flour, salt, sugar and soda. Mix the pumpkin, eggs, oil, 1/4 cup water and spices together in a separate bowl.

Then combine with the dry ingredients, but do not mix too thoroughly. Gently stir in nuts. Pour into greased bread pan, bake at 350 degrees for 50-60 minutes until toothpick comes out clean. Makes 1 loaf. Top each slice with the wonderful orange sauce!

ORANGE SAUCE:

Juice of 1 orange
1 tbsp. lemon juice
1 c. water
1/2 c. sugar
3 tbsp. cornstarch
Grated rind of 1 orange
1 egg, lightly beaten
1 tsp. butter

In saucepan combine juices and water. Add sugar and cornstarch, stirring over a low heat until dissolved. Add rind, egg and butter. Keep stirring until mixture boils and thickens. Allow to cool and store in containers and keep refrigerated.
