MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. Spanish peanuts
1 tsp. vanilla
2 tbsp. butter
1 tsp. baking soda

Mix sugar and corn syrup; microwave on high for 4 minutes. Add peanuts and microwave 4 more minutes. Grease cookie sheet with butter and heat in stove until warm. Add vanilla and butter; stir well. Put back in microwave for 2 minutes. Add baking soda; mix well. Quickly pour on warm cookie sheet, then let cool.

Since microwave ovens vary in power, you may need to adjust your cooking time.
