MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. corn syrup
1 tsp. vanilla
1 tbsp. butter
1 tsp. baking soda
1 3/4 c. (10 oz.) raw peanuts

Grease cookie sheet, combine sugar and syrup in a 2-quart bowl, microwave on High 6 minutes. Stir in peanuts with wooden spoon. Microwave 5 1/2 minutes longer. Stir in butter and vanilla. Blend in baking soda, stir until foamy. Pour onto buttered cookie sheet and spread thin with buttered spatula. Let cool, break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
