TEXAS MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. raw peanuts
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In a 1 1/2 quart casserole, stir together the sugar, syrup, raw peanuts and salt; mixing well. Microwave at high for 6-9 minutes until light brown. Add butter and vanilla and stir well. Microwave at high 1-2 minutes more. Peanuts will be light brown and syrup will be very hot. Add baking soda and gently stir until light and foamy. Pour into lightly buttered cookie sheet. Let cool 1/2 to 1 hour. When cool, break into small pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
