PEANUT BRITTLE 
1 c. white sugar
1 c. light corn syrup
1/2 c. water
1 tsp. baking soda
1 1/2 c. salted peanuts
1/4 c. butter
1 tsp. vanilla

Boil the first 3 ingredients for 4 minutes. Then add the peanuts, butter, and vanilla. Continue boiling hard, stirring constantly, about 5 to 10 minutes more, until it actually turns brown, almost burning. Then quickly add the 1 teaspoon baking soda and remove instantly from the stove. Have a buttered cookie sheet ready. The mixture will foam up but quickly spread out (with spatula) to cover most of the cookie sheet. This will harden very quickly and can be broken up into pieces.
