MICHAEL'S FRUIT AND NUT SQUARES | |
2 eggs 3/4 c. packed brown sugar 2/3 c. chopped nuts 1/2 c. diced mixed dried fruits 1/2 c. whole wheat flour 1/4 c. plus 2 tbsp. wheat germ, divided 1/4 tsp. salt In medium bowl beat eggs and sugar until slightly thickened. Stir in nuts, fruits, flour, 1/4 cup wheat germ, and the salt. Spread in greased 8-inch square baking pan. Sprinkle with remaining 2 tablespoons wheat germ. Bake in preheated 350 degree oven 15 to 20 minutes or until lightly browned. Cool in pan on rack. Cut in 2-inch squares. Makes 16.
