STUFFED ZUCCHINI 
4 lg. zucchini
1/4 c. chopped onion
1 egg, beaten
1 tbsp. veg. oil
Salt & pepper
1/4 tsp. oregano
1/4 tsp. basil
3/4 lb. ground beef
1/2 c. bread crumbs
1 (8 oz.) can tomato sauce
1/3 c. Parmesan cheese
1 clove garlic

Cut one thin lengthwise slice from each zucchini. Cut one small slice off each end. Scoop contents out of zucchini shells and set aside. Saute beef and onion in oil. Mix 1/4 cup of tomato sauce with the egg and bread crumbs and add to the meat and onion. Blend together until well mixed. Fill zucchini shells with the meat mixture and place in greased baking dish.

To the remaining tomato sauce add oregano, minced clove of garlic, basil, salt and pepper and the scooped out sections of the zucchini. Pour this mixture over the filled shells and sprinkle with Parmesan cheese. Cover and bake at 350 degrees for 30 minutes. Remove cover for the last 10 minutes. Serves 4.
