QUICK HAMBURGER AND POTATO
CASSEROLE
 
2 2/3 c. instant mashed potato flakes
1 1/2 c. sour cream
1/2 c. water
1 lb. ground beef
3 tbsp. chopped onion or 1 tbsp. dried minced onion
1 (15 oz.) can tomato sauce (2 c.)
) can corn (with sweet peppers if you can fine it), undrained
1/2 c. water
1 tsp. salt
1/4 - 1/2 tsp. pepper
1/8 tsp. oregano
1/2 c. diced American or cheddar cheese

In ungreased 9"x13" baking dish, blend potato flakes with sour cream and 1/2 cup water. Mixture should be crumbly. If not, add more potato flakes. Pat firmly into bottom of pan. Brown beef (with onions, if using fresh), and add to meat the second 1/2 cup water and remaining ingredients except cheese. Spoon beef mixture over potatoes. Sprinkle with cheese. Bake at 350 degrees for 25 to 30 minutes. This recipe is easily doubled. Serves 6.
