CHUCK WAGON SKILLET DINNER 
1 lb. ground chuck
2 tbsp. butter
Dash pepper
1 c. chopped celery
1/2 c. sliced ripe olives (optional)
2 c. med. sized noodles, uncooked
#303 can stewed tomatoes
1/4 c. onions, chopped
1 tsp. salt
2 c. shredded Cheddar cheese
1/4 c. water

In large, covered skillet, melt butter. Saute onions until tender. Add meat, salt, pepper. Brown slowly. In layers add (in this order) cheese, celery, olives and noodles. (DO NOT STIR.) Pour on tomatoes and water. Cover and bring to steam. Turn heat to low, simmer for 30-35 minutes. DO NOT REMOVE COVER DURING THIS TIME. Serves 4.

Do not cook noodles first. Covered skillet allows noodles to cook in steam. Be sure heat is turned low during this time.

I love this recipe! Brings back the good-ol-days. My parents used to fix this when we went camping in a big dutch oven over the coals, and later from the stove of their 5th wheel. I'm not crazy (or some weird aversion) to black olives, but it makes this dish. I love it for the memories and the taste. Just watch it carefully and be ready to add little bits of water if needed to prevent scorching.

I am 65 and grew up on this. It was in the Omaha World Herald when I was about 12. It has always been one of my favorite dishes. I have searched for years to find this and am so glad you posted it!
