CHUCK WAGON STEW 
4 lbs. sirloin or stew meat
3 cans beef consomme
48 sm. white boiling onions
24 whole mushrooms
4 green peppers
2 c. red wine (burgundy)
1 pt. sour cream
2 cubes butter
4 tbsp. flour
Salt and pepper to taste

Cut meat into strips and peel onions. Saute in butter until meat browns. Remove onions and pour flour over meat, and simmer until butter disappears. Add consomme and simmer for 20 minutes. Cut mushrooms and pepper into strips. Add onions, mushrooms, and peppers to the meat. Cover and simmer for about 1 hour.

Just before serving time, reheat and then add wine, and sour cream, and salt and pepper to taste. This recipe serves 8.
