CHICKEN WITH GREEK CITRUS
MARINADE
 
1 C olive oil
1 onion, thinly sliced
2 cloves garlic, crushed
1/2 C orange juice
1 tsp grated orange peel
2 tbsp ginger, grated
2 tsp rosemary
2 tsp oregano
2 tbsp vinegar
Salt and pepper to taste
1 cut up chicken

Combine all ingredients in a jar with a tight fitting lid. Shake well.

Pour marinade over cut up chicken and marinate at least one hour, preferably over night.

Bake chicken until cooked through.

Boil left over marinade and serve as a sauce.

Any left over marinade freezes well as long as it is not cooked.
