MEATLOAF FLORENTINE 
1 1/2 lbs. ground beef or meatloaf mix
2 c. frozen spinach, defrost, squeeze, and drain
1/2 c. bread crumbs
8 oz. grated Cheddar cheese
2 eggs
1/4 c. Parmesan cheese
Salt and pepper to taste

Blend all ingredients, reserving 1/2 cup of Cheddar cheese. Form into 2 loaves. Sprinkle reserved cheese over top. Bake for 1 hour at 375 degrees. Pour brown gravy over top for last 15 minutes of baking to moisten.

This is delicious ! I used fresh spinach instead if frozen, left out all the cheese and didn't top with "gravy" to make a healthier, lower calorie version.
