MEATLOAF STRATA 
3/4 lb. ground beef or mixture of ground beef, pork & veal
1 egg
1/3 c. tomato or vegetable juice
1 1/2 c. soft bread crumbs
1/2 tsp. salt
1/8 tsp. black pepper
1 (10 oz.) pkg. frozen chopped spinach/broccoli, cooked
2 c. cooked rice
1 tbsp. minced dried onion
1 tsp. salt
1 tsp. dried thyme
1 c. milk
1/2 c. grated Parmesan cheese
2 beaten eggs
1/2 c. shredded Cheddar cheese

Mix meat with egg, juice, bread crumbs the 1/2 teaspoon of salt and black pepper. Pat into a 1 quart ungreased casserole. Bake at 350 degrees for 20 minutes.

Cook spinach or broccoli according to package directions. Mix with rice, onion, salt, thyme, milk, Parmesan cheese and eggs. Pour over meatloaf mixture.

Return to oven. Bake 30 minutes more or until firm. Sprinkle with Cheddar cheese.
