ROLLED MEATLOAF FLORENTINE | |
1 1/2 lbs. ground beef 1 egg 2/3 c. dry, flavored bread crumbs 1 tsp. oregano 1/2 tsp. garlic powder 1/2 tsp. basil 1/4 tsp. black pepper 1 (16 oz.) jar meatless spaghetti sauce 1 (10 oz.) pkg. frozen spinach, thawed and drained 1 (8 oz.) pkg. Mozzarella cheese, shredded 3 tbsp. grated Parmesan cheese In large bowl, mix beef, egg, bread crumbs, oregano, garlic powder, basil, pepper and 1/2 cup spaghetti sauce. On waxed paper, pat meat mixture into 9 inch square. Spread spinach over meat to 1 inch of edge, sprinkle Mozzarella cheese over spinach. Starting at one end, roll meat, lifting waxed paper to help shape roll, until ends slightly overlap. Pinch ends to seal. Place rolled loaf, seam side down, in 9x5 inch loaf pan. Cover with waxed paper. Cook on Medium for 16 to 20 minutes, roasting dish 1/2 turn after 8 minutes. Drain and discard juices. Pour 1/2 cup spaghetti sauce over meatloaf (reserve remaining sauce to use another day); sprinkle with Parmesan cheese. Cook, uncovered, on High for 2 minutes. Cover loosely with waxed paper; let stand 5 minutes. Makes 6 servings, 440 calories per serving. This recipe can be adapted for use with a conventional oven. |
