GOURMET ROLL-UP MEATLOAF 
2 lbs. ground beef or combination ground turkey, veal, or pork
2 med. onions
1 lg. green pepper, or red pepper, or both
8 to 10 oz. Cheddar cheese, grated
4 slices bacon (optional)
Wax paper
Barbecue sauce, or ketchup, or French dressing

Mix 2 pounds meat mixture with your own personal meatloaf ingredients; mix well. Turn mixture onto large piece of wax paper; pat out to approximately 13x9 inch shape and 1/2 inch thick. Lay bacon strips over meatloaf. Sprinkle peppers, onions, and cheese over the whole loaf.

Roll up; secure ends. Roll onto arm and into pan. Should have shape of a jelly roll. Brush on sauce. Bake at 350 degrees for 1 hour and 10 minutes until done. Makes meatloaf fancy for company. May be frosted with mashed potatoes, dabs of butter and grated Parmesan cheese. Return to oven and broil until butter is melted.
