PUMPKIN MUFFINS 
2/3 c. powdered milk
2 tsp. pumpkin pie spice
1 tsp. baking soda
4 tbsp. raisins (or applesauce)
1 tsp. cinnamon
2 eggs
1 c. pumpkin
6 tbsp. flour (I use wheat flour)
8 pkg. Sweet-n-Low (I use Weight Watchers sugar)
1 tsp. vanilla
1/2 c. grated carrots

Mix well. Bake at 350 degrees for 20 to 25 minutes. Makes 12. 6 muffins (1 serving). 1 bread, 1 milk, 1 1/2 vegetable, 1/2 fruit, 1 protein. (I double the recipe.)
