POULET ROTI 
2 chickens, quartered
1 pkg. carrots
4 to 5 stalks celery
3 lg. onions
Salt, pepper, garlic powder, paprika

Place chicken skin side down and sprinkle generously with the four seasonings. In middle of roasting pan place carrots sliced in 1 1/2 to 2 inch slices, celery cut into 1 1/2 to 2 inch pieces and onions cut into 1/8 inch slices. Place chicken skin side up carefully over vegetables, so that all vegetables are sealed in dish. Sprinkle seasonings generously over chicken. Bake in 500 degree oven for 1 hour on low shelf. Chicken is very brown and vegetables are steamed in the chicken. Serves 4.
