BETH'S MEXICAN CORN BREAD | |
1 c. butter 1 c. sugar 4 eggs 4 oz. chopped green chilies 1 reg. size cream style corn 1/2 c. grated Jack cheese 1/2 c. grated Cheddar cheese 1/4 tsp. salt 1 c. flour 1 c. cornmeal 4 tsp. baking powder Heat oven to 350 degrees. 1. Combine dry ingredients; set aside. 2. In large bowl, cream butter and sugar. Add eggs one at a time, mix well. 3. Add chiles, corn and cheese, blend well. 4. Add dry ingredients; mix just until blended. 5. Pour into lightly greased 13x9 inch pan. 6. Bake 50-60 minutes until set and lightly browned (will be moist). |
