SWEET PICKLES 
7 lb. cucumbers, peeled, quartered, seeds removed
2 c. lime
2 gal. water

Pour over cucumbers and let set 24 hours. Rinse well. Soak in ice water 3 hours.

Mix 2 quarts vinegar, 8 cups sugar, and 1 tablespoon salt. Put in a cheesecloth 1 tablespoon celery seed, 1 tablespoon whole cloves, 1 tablespoon pickling spice. Soak all overnight. Cook until they start to look glassy. Stand on end in jars and pour vinegar juice over top. Fill to 1/2 inch from top of jar. Seal with new lids.

(Can add a little green food coloring when mixing the vinegar mixture for added color.)
