BLACKENED OR DEEP FRIED | |
Iron skillet High temp. cooking oil (or olive oil) Chef Paul Prusttommes "Magic" seasoning blends Red (fresh cayenne) pepper Set iron skillet on medium high burner. Cover bottom of skillet with cooking oil (approximately 1/4 cup). Do not use too much. Liberally pour spice blend into oil and let blacken for several minutes. Add red pepper only if you desire very hot and spicy food. Cook fish fillets about 1 to 1 1/2 minutes per side. (Recipe works well with shrimp.) DEEP FRIED: 2 eggs 1/2 c. milk 2 c. yellow cornmeal 1 c. all-purpose flour 1/2 tbsp. Old Bay seasoning 1/2 tsp. salt 1 tsp. pepper Vegetable cooking oil Mix eggs and milk and allow fish fillets to soak for about 1 hour. BATTER: (Use 2 cups yellow cornmeal to 1 cup flour.) Mix meal and flour and add seasonings. COOKING: Dip fish one piece at a time into dry batter mix, coating well. Place into electric skillet heated to 380 degrees. Use plenty of oil and cook for 1 1/2 to 2 minutes per side. |
