SALMON PATTIES 
1 lb. can pink salmon
1 egg
Cornmeal
Self-rising flour
1 sm. onion, minced
Pepper to taste
Bacon grease or oil

Put salmon in medium size bowl. Debone and flake. Add egg, onion and pepper to taste. Beginning with 1/2 cup each, add equal amounts of cornmeal and flour until you have a stiff batter. Amounts will vary, depending on liquid in salmon and size of egg. Heat 1/2 inch deep bacon grease or oil until hot, shape salmon into patties and fry until brown on both sides. You will have to add additional oil about halfway through cooking. Drain on paper towels and serve hot. They are also good to eat at room temperature later in day as a snack.
