CREAM PUFFS OR CHOCOLATE ECLAIRS | |
1 c. water 1/4 tsp. salt 1 tsp. sugar 1/2 c. butter 1 c. all-purpose flour 4 eggs UTENSILS: Heavy saucepan Wooden spoon Measuring cups and spoons Cookie sheets Knife Put water, salt, sugar and butter into a heavy saucepan and bring mixture to a full rolling boil. Add flour all at once. Remove from heat and stir until flour is well mixed. The mixture should be smooth and pasty. Beat in the eggs, one at a time - each time until the batter is smooth. Put mixture in refrigerator for about 15 minutes. Shape into desired shape or size and make them as high as possible. (Use pastry tube or two spoons). Place about 1 1/2 inches apart on greased baking sheet. Bake in hot oven (400 degrees) for 20 minutes for small or 35 for large ones. The puffs should be golden brown and light weight. Remove from oven about 5 minutes before they are ready and poke a hole where crevice is to let out steam. Return to oven for about 5 minutes. Makes 12 large or 30 small. |
