FRUIT COCKTAIL CAKE WITH ICING 
2 c. flour
1 tsp. baking soda
1 1/2 c. sugar
1/8 tsp. salt
1 c. fruit cocktail, juice and all
2 eggs, slightly beaten
1/2 c. melted butter
1 c. pecans

Mix flour, soda, sugar and salt. Pour in juice and all of fruit cocktail. Add eggs and butter, then pecans. Mix well. Bake in oblong 13 x 9 x 2 pan or loaf pan at 300 degrees for 45 minutes to 1 hour.

ICING:

1 stick butter
1 c. sugar
1/2 c. Pet milk
1 c. coconut

Mix butter, sugar and milk in sauce pan. Boil for 2 minutes. Add coconut. Cool. Spread on cake.
