BEEF & VEGETABLE STEW 
1 1/2 lbs. beef, cubed
4 med. sized carrots
4 med. sized potatoes
6 med. sized tomatoes
1 med. sized onion
1/2 c. peas
8 florets cauliflower
1/4 tsp. ginger
1 tsp. salt
Dash of pepper
3 c. water
3 tbsp. oil or butter
4 sm. onions

Brown onion cut up in small pieces in oil in a pan. Add cubed beef, salt, pepper and ginger and fry until slightly browned. Add tomatoes cut up in small chunks with 3 cups water and allow to simmer for about 20 minutes. Then add carrots and potatoes and allow them to cook for about 10 to 12 minutes. Finally add the peas, cauliflower and onions and allow to cook until done. Serve with white rice.
